

Pepper Parcels Recipe
All food will be served like this in ten years’ time, probably made by robots, untouched by human hands and with the ingredients grown in huge floating airships … or on another planet. The foil parcels should be served straight from the oven so provide gloves to any guests.

Preparation time: 15 minutes. Cooking time: 20 minutes.
Ingredients (serves 2)
1 courgette
1 red pepper
1 yellow pepper
1 red onion
1 clove garlic
100g/ 4oz mushrooms
4 tablespoons of oil
1 tablespoon of vinegar
2 teaspoons of mixed herbs
2 teaspoons of honey
Salt and pepper

1. Heat oven to 190°C/375°F

2. Cut the peppers up into bite-sized strips, making sure to remove the white placenta and seeds.

3. Peel and slice the onion and clove of garlic into thin strips.
​
4. Wash, top and tail the courgette and cut into ½ cm-slices, then cut into semi-circles.

5. Wash and slice mushrooms.
​
6. Tear off some foil to make 2 rectangles of 30cm x 50cm (a school ruler x your best friend’s femur). Divide the vegetables in half and place a pile in the centre of each foil rectangle.


7. Sprinkle some salt, pepper, a teaspoon of mixed herbs onto each vegetable stack and fold up the sides of the foil to form a parcel. Add a tablespoon of oil and a teaspoon of honey to each one and seal up.

8. Place parcels in middle of oven for 20 minutes.

9. Remove carefully and open parcel onto a plate, sprinkling the softened vegetables with the remaining oil and vinegar.
