

Sweet and Sour Pork
There are a lot of ingredients but you need them all to capture the fragrant flavour of this Chinese-restaurant favourite. Serve on its own or with rice.

Ingredients (serves 2-3)
400g pork fillet
2 tablespoons of oil
1 sliced onion
1 clove of garlic
220g can of bamboo shoots, drained
1 tablespoon of sugar
1 tablespoon of ketchup
2 tablespoons of soy sauce
2 tablespoons of vinegar
1 red pepper, deseeded and cut into thin strips
1 carrot, halved, peeled and cut into thin strips
2 tablespoons of flour
½ cup of water
1 ½ cups of rice
Salt and Pepper

Mixing bowl
Saucepan
Wok or large frying pan
Sharp knife

1. Pour the flour in the mixing bowl with a pinch of salt and pepper.

2. Cut the pork up into bite-sized strips, add to the mixing bowl and shake it around to coat in flour.

3. Heat oil in wok or frying pan for 2 minutes at medium hot and add pork. Stir-fry for 5 minutes.

4. Remove pork with a fork and place onto kitchen paper to become crisp.
​
5. Keeping the oil in the pan hot, add the onion and stir-fry for five minutes.
​


6. Put a saucepan of water on to boil. When it is bubbling, add the rice and cook for 10-12 minutes.

7. Meanwhile, add the garlic, carrot and red pepper to wok and stir-fry for 8 minutes.

8. Return the pork to the wok/pan and add the bamboo shoots, vinegar, soy sauce, sugar, water and ketchup. Bring to the boil and leave to simmer for 5 more minutes, stirring three times.
9. Serve immediately on top of the drained rice.
